So, after getting maybe 20 minutes of sleep after that horrible dream, I was hungry. And let me tell you something people, I love me some breakfast. There was one pancake left, so I heated it up and scarfed it down. But it just..Wasn't..ENOUGH!
So there I am, staring into my refrigerator like we all do. And my eyes catch a glimpse of the eggs sitting on the top shelf. I quickly glance back down, in hopes of finding something else.
Before I continue, you have to understand my love affair with eggs. You see, I love eggs. Especially over medium. Simply, the best. But I've never been able to make them right! They're always falling apart on me. My mom can make them, my dad can make them. Heck, my 11 year old sister can make them!
Now, on with my story. There was nothing else to eat. I was tired of shredded wheat, and sick of toast. So I grabbed me an egg. Set the stove to medium, added a little butter, letting it melt, and cracked the egg perfectly the first time. (At about this time I started to get a little confident xD)
The egg began to sizzle and simmer, making a beautiful noise. I sprinkled it with pepper and salt. And then..the moment of truth. It was now time to flip the egg. I took the small spatula, sliding it under the egg ever so gently, and flipped it over..It didn't break! I was beyond ecstatic. I felt as if a symphony would start at any second with the heavens opening up.
That egg was cooked to perfection my friends. Absolutely delicious. So what did I do next?
I made another one! And it was even better! After years of broken yolks and runny whites, I perfected the over medium egg. Today, is a great day =]
